Organic Arkansas Black and Winesap apples from Sebastopol, California are hand harvested, crushed, pressed and wild fermented from naturally present native yeasts. True to Petilant Natural, the base cider is unfined, unfiltered and bottled before primary fermentation is allowed to finish, resulting in a unique, naturally sparkling cider.

Winesap apples are a heritage variety known for their sweet, fruity and spice-like aroma with subtly savory wine-like nuances. Arkansas Black, true to its name, is a thick skinned, black apple thought to be a descendant of the Winesap. Its flesh is sweet and firm and when ripe, offers notes of cherries, cinnamon, vanilla and coriander.

Tasting Notes: Round and chewy textures, with high intensity, savory aromas of pungent herbs (mint, shiso, Peruvian black mint, fennel fronds, matcha green tea, white chocolate) and ripe tropical fruit (papaya, jackfruit, and dried Turkish apricots). 

Favorite CHEESE pairings: Goat Gouda was the only cheese that harmonized to bring forth the savory- sweetness of fennel and match up front, to finish on a melange of herbs. 

BEST Pairing with Smoked Tri-Tip and or anything smoked.
