Wild foraged Gravenstein apples are hand harvested from abandoned orchards rediscovered along the back roads of Sebastopol California and crushed, left to macerate on their skins, seeds and flesh for over two days. The must is then pressed into French neutral oak barrels and undergoes a wild fermentation from naturally present native yeasts before undergoing an additional secondary fermentation in bottle.
The Gravenstein is a Danish apple first planted in Sonoma County, CA in 1811 by Russian fur trappers. They are difficult to grow, extremely delicate and easily perishable, making them particularly hard to come by. Gravensteins have long been celebrated for their unique and exceptional taste. The flesh has a floral-fruity aroma and balances sweet and tart with subtle acidic nuances, leaving lingering honeyed notes on the palate.
