Sidra California pays homage to the ciders of Northern Spain. Made with Northern California crab apples, this cider is fruit forward, dry and features a fresh and funky acidity ending in a long finish that is characteristic of traditional Spanish cider, yet breaks from tradition in that it is delicate, highly aromatic and features light effervescence. Pair with fresh seafood, smoked cheeses or a thick ribeye steak.
Wickson crabapples are the primary varietal used to produce this cider. Wickson was introduced in Humboldt County, California in 1944. Breeder Albert Etter named his new variety after Edward J. Wickson, a friend and distinguished California pomologist considered to be βThe Father of California Agriculture.β They are one of the few apple varieties native to the state of California (Hence Sidra California).
Wickson is unusually sweet, but at the same time has a strong acid component. The result is a sharp apple which has a high sugar content and very strong flavor, making it an excellent candidate for champagne-style cider.
